At the tip of the southern-most island of Japan lies Kagoshima. From the active volcano Ontake clouds drift up over this rough isolated covered with lush tangled jungles of wild kuzu. Kuzu is a tenacious vine that only the Japanese seem to have tamed. Dug by farmers, its root is pounded and washed to separate the valued starch from the fiber. Then it is left shaded in the winter air to dry. Kagoshima Authentic Kuzu Noodles are the only kuzu noodles made with 100% real kuzu.
